Vivre, a Blanc de Blanc Cap Classique from Terre Paisable, is made from 100% Chardonnay vines harvested in 2019 – a standout year for South African white wines. The early harvested grapes, combining freshness and acidity, are whole-bunch pressed then fermented and matured in stainless steel before spending four years under crown cap. The firmly structured palate with its fine bead and persistent mousse is balanced by weight and richness that comes from extended ageing on lees. Characterised by its complex forward aromas of freshly baked brioche, marzipan and citrus zest, this wine delivers a charming finish of bracing freshness and length.
