No one is a prophet in their own land, except, that is, for chef Massimo Bottura. Founder of the three-Michelin-star restaurant Osteria Francescana in Modena, Bottura also once single-handedly saved the local Parmigiano-Reggiano industry after an earthquake struck the humidity store rooms – armed as he was, with only a now-famous risotto recipe. After appearing in the first season of the crème de la crème of culinary shows, Chef’s Table, Bottura is again gracing our screens in a collaboration with Officine Panerai.
Called ‘Panerai Traits’, the video is part of a project featuring Bottura and three other significant personalities – Guillaume Néry,Costas Voyatzis, Jason M. Peterson – who are said to embody the ‘distinctive traits of the brand.’ Bottura’s video is themed around innovation – a perfect fit – and explores this through his motto of ‘tradition in evolution.’
‘Look at the past in a critical way, not nostalgically. To innovate, it is necessary to take the best of the past and carry it forward into the future’, explains Bottura.
